The vegetable bok choy (sometimes labeled bok choi) is considered a staple of Asian cooking. It has both a crunchy stalk and some tender leaves. The whole plant is edible. Some people think it is celery but it is not and it is called “Chinese cabbage.”  Bok choy is an excellent source of fiber and is loaded with vitamin C, vitamin K, vitamin A, and beta-carotene. It is an excellent source of folate, calcium, and vitamin B6 too.  The Chinese have been eating this for over 5000 years. Studies link bok choy to being anti-inflammatory and antioxidant.

Add raw bok choy to a salad combination. There are many ways to jazz up a salad and several recipes pair this with sesame oil, sesame seeds, and soy sauce.

Cook Bok Choy

You can cook the stalks and leaves, add them to soup, roast or steam them, and it is incredible to stir-fry. Many recipes show garlic with this veggie so get ready for some flavor explosion.
